Recipe:: Stuffed Mushrooms

Shrooms Bro!

You know, every now and then I forget how good mushrooms taste, and how versatile they are. 
I was shopping in Sprouts Farmers Market the other day and I noticed a package of ready to bake stuffed mushrooms. They look really good and looked like they had some diced peppers and cheese in them. I figured they’d be easy to make and I had all the ingredients I thought I needed so I didn’t buy them. 
Turns out they are easy to make and low in cals too. Here’s how I did it. 

Ingredients ( Most ingredients are optional and you can swap out as you wish.) – 
  1. Serrano pepper (Or jalapeño)
  2. Minced Shallots
  3. Shredded spinach 
  4. Garlic
  5. Diced yellow bell peppers
  6. Diced red bell peppers
  7. Turkey Pepperoni (or Turkey sausage crumbles)
  8. Reduced Fat Cheddar Jack Shredded Cheese
  9. Olive oil (I used ¾ tsp along with some Pam spray)
  10. Mushrooms
  11. Parsley
  12. Salt & pepper
  1. Remove the mushroom stems but do NOT discard them. They are full of flavor and can be added to the stuffing. 
  2. Remove the ‘gills’ inside the mushroom caps. This is optional but can make more room for stuffing.
  3. Shred the mushroom stems using a food processor and Sauté them with everything in the ingredients list except the mushrooms and cheese. 
  4. Once the stuffing is slightly cooled, add them to the mushroom caps and top with cheese. 
  5. To make this easier, I wadded up some cheese into a semi ball and pressed them into the stuffing. This kept things neat and easy to do. 
  6. Place mushrooms on greased baking tray or use parchment paper
  7. Spray some pam on the mushrooms or baste with olive oil. (They tend to dry up and shink).
  8. Preheat oven to 400 and bake for 8-12 mins. 
  9. If desired, bake for 2 mins less, raise the tray to near the broiler and broil for 2 mins. 
  10. Garnish with red pepper flakes and / or green onions. 
This worked out to around 25-27 calories per mushroom. I had around 5-6 for dinner and was quite satisfied.

Looks yummy! I, too just brought back mushrooms back into what I am including in my diet. I sautéed some portabellos and onions in a little chicken broth and garlic powder. I eat on top of 1/2 of a baked potato --delish!
