I would like to be able to take a recipe that I have and copy it so I can modify the copy and have another version of the recipe with slightly different ingredients / amounts without losing my original.

Do we have this ability and I don't see it?

I've found myself wishing for this too!

It would also be nice to be able to modify the amount in an existing recipe without deleting one ingredient entry and adding another (why can't it be the same as in the food diary?)

Sorta new to this...are you able to make request to the makers of this site?

If you're using one or more of the apps you may find you can edit the recipe ingredient quantities there, sadly it's not on the website and at this time a recipe can't be copied or "Saved as" a different version of the recipe. One possible work-around for that is to make the basic recipe as a component...
such as
pizza crust - make a couple recipes for the crust if you vary your recipe
pizza sauce - again make a couple recipes for the sauce if you vary
pizza toppings - things like the ham and pineapple for a hawaiian, hot peppers, spicy sausage etc for a hot-stuff pizza
make sure you add all the ingredients in the quantity you'd actually use IE if your pizza makes 8 slices make sure you add the sauce and toppings in the quantity to load your 8 slices not putting 2 pizzas worth unless you'll remember to log half a serving.

when you make a pizza you check the crust, sauce and chosen toppings
can be done for a basic salad that's pretty much the same and then just add the extras
like if one time you have a spinach raspberry salad with a vinagrette you could have the spinach raspberry salad saved and then the toppings added at the time for each salad... be that a half a chicken breast one time, tofu another, slivered almonds or pomegranate arils another...
