My friend just shared this recipe with me. Thought it was great & had to pass it on :)

Preheat oven to 200 degree C

1 zucchini, grated
2 eggs
2 tbsp flour (you could sub with rice, coconut, spelt or almond flour)
3/4 cup almond butter
1/4 cup honey
1 tbsp vanilla extract
1 tbsp cinnamon
3/4 cup cocoa powder

Mix everything together, pour into a pre-greased (I usually use cooking spray) 9x13 baking pan.

Bake for 30 mins or until cake is nice and springy to the touch.

Thanks for sharing. I have everything but honey. Can I substitute it for something else like maple syrup?

Maple syrup should be an ok substitute for honey. I prefer honey as it affects your blood sugar less than maple syrup.

A quarter cup of honey is 260 cal, 70 carbs, 0 fat and 0 protein.
A quarter cup of maple syrup is 200 cal, 53 carbs, 0 fat and 0 protein

This seems tasty! I'll give it a go this weekend!
