Oatmeal Peanut Butter Cookies, yes they are low carb AND low calorie!






1 cup oatmeal
1 cup peanut butter
1 cup splenda sugar substitute
1 tablespoon vanilla extract
2 egg


Preheat oven to 350 degrees F. Spray a cookie sheet with cooking spray.

Mix the oatmeal, peanut butter, sugar substitute, vanilla and egg all together. Roll dough into walnut-sized balls and place 2 inches apart on the cookie sheet.

Flatten the cookies. Bake 9-10 minutes.

Just made these, sort of. I substituted fresh ground cashew butter for the peanut butter. They are in the oven cooking right now, and are going to be dessert! Thanks for the recipe, hope you don't mind the ad-libbing of it. happy

Thanks, i pinned it. I would use Stevia in place of the Splenda.
