I altered a recipe to make it low cal and it came out fantastic!!
1 box yellow cake mix
1 small box sugar&fat free instant vanilla pudding mix
1 - 8oz fat free whipped topping
1- 20oz can crushed pineapple - no sugar added
maraschino cherries (optional)
walnut pieces (optional)
I made the cake using 2 eggs, 1 tbl of oil and 1/4 cup applesauce. Baked in a greased 9x13 pan for however long the box says to bake. As soon as it comes out of oven, while it is still hot, poke holes in cake with fork. Pour can of crushed pineapples with juice over cake. Let cool completely. In separate bowl, mix pudding mix with 1 cup of milk. Fold in container of whipped topping. Spread on top of cake. Makes 15 servings if using 9x13 dish.

Duncan Hines Moist Deluxe - Classic Yellow Cake (Mix Only), 1 package mix only 160 cals
Jell-O (Jello) - Sugar & Fat Free Vanilla Instant Pudding (Mix Only), 1 pkg (8g) 100 cals
Kroger - Fat Free Whipped Topping, 1 container (50 tbsp (9g) ea.) 500 cals
Dole - Crushed Pineapple In 100% Pineapple Juice, 1 container (2 3/10 cups ea.) 315 cals
Harris Teeter - Pure Vegetable Oil , 1 tbsp 120 cals
Harris Teeter - Original Applesauce, 1/4 cup 45 cals
Prior - Kokt Egg, 2 egg 140 cals
Great Value - Milk-Lactose Free Reduced Fat, 1 cup 130 cals
Kroger - Maraschino Cherries - Whole, 15 Cherry 150 cals
Total: 1660 cals
Per Serving: 111 cals (15 servings)

Is the cake mix only 160 calories for the whole mix or is that per serving too? I always assumed mix only meant per serving.

Too good to be true - 160 calories in the cake mix is for 1/12 of the box. Eat it anyway and savor it - looks yummy!
