So I wanted to add tofu to my weekly diet. Is there certain kind I should get? What is the best way to cook it. Any ideas or recipes??

I usually buy extra firm and pan-fry it in a little coconut oil, then add frozen veggies to the pan, and once they're cooked through add ginger, dry mustard, soy sauce... stuff like that, and eat over brown rice. You can also grill it. Soft Tofu is for smoothies.

Ok so firm tofu. What will the texture be like? Where do I get it in store?

Firm or Extra Firm Tofu is thick and spongey and slightly greyish-white and it's packed in water because it has to stay moist. If you don't use a whole package in one sitting, you need to put the extra (uncooked) in tupperware, cover it with fresh water, and keep it in your fridge. As far as where in the store to find it, it will be refridgerated. Some stores have a tofu / meat & dairy substitute section... my walmart has it between cheese and meat.. Near deli meat.

Tofu is labeled "extra firm", "firm", "soft", etc so you don't have to try to mush it and guess or anything. laugh

You can use extra-firm tofu in Indian recipes that call for "paneer" - it's about half the price and hardly any difference in taste.
