1/2 lb. ground turkey breast
1 (15 oz.) can black beans, rinced & drained

1/2 tsp. cumin
1 cup shredded reduced-fat Cheddar Cheese or Mexican 4-cheese (4 oz.)
8 - (8-inch) flour tortillas

Prepare:
Preheat oven to 375 degrees F. Coat a baking sheet with non-stick cooking spray. In a medium non-stick skillet cook ground turkey, stirring occasionally, until no longer pink. Stir in beans, salsa, cumin and cheese. Season with salt and pepper to taste.
Spoon about 1/2 cup of the turkey mixture on half of each tortilla. Fold tortilla over filling and place on the baking sheet.
Coat the tops of the quesadillas with nonstick cooking spray. Bake 10 to 12 minutes or until edges begin to brown. Transfer to a platter, cut in half, and serve with additional salsa.
Per serving: 240 Calories, 30g carbohydrates, 16g protein, 3g fiber, 8g fat, 3g saturated fat, 25mg cholesterol,, 640mg sodium.
(I also entered it in so that when entering it as a meal you can pull it up in the search.)
Also, if using the directions and placing them on a cookie sheet, they are exceptionally good but the mixture somewhat runs out. I would suggest trying this method first or cooking them individually in a skillet so as to brown them on both sides making both side crispy! These are yummy so be prepared to eat 2 servings as it is difficult to stop at just one!
Enjoy!
