In case anyone was wondering, I do eat hamncheese sandwiches on occasion:



Dinner was pan-fried salmon, oven-roasted broccoli, and quinoa:



Dessert was egg white chocolate omelet with peanut butter & banana filling and whipped fat-free topping:

Filling was just 1 T of peanut butter and 1 banana sliced which I lightly sauteed in a 1/2 tsp coconut oil with some cinnamon powder. Then the omelet was ~1/2 cup of egg whites (I used from the carton), 1 T cocoa powder (used Hershey's Special Dark), with vanilla extract and a few drops of stevia extract to sweeten, mixed together. Then make like a regular omelet - egg mixture in fry pan, set a little, spoon in filling, flip and serve. Whipped topping came out of an aerosol can.

Pretty typical breakfast for me - coffee and overnight oats. This happens to be peach blueberry, very tasty!



tjradd73 - You should try the casserole, it was really easy to throw together and didn't taste like "healthy" food at all!
