TOPIC: Sausage and Cheese Breakfast Muffins

Ingredients

5 large eggs
4 oz turkey sausage
5 oz canned mushrooms
1/4 cup chopped onion
1/2 cup chopped green bell pepper
2 oz shredded reduced fat cheddar cheese

Directions

Pre-heat the oven to 350 °F (175 °C). Coat a 6-cup non-stick muffin pan with cooking spray, or line with paper baking cups.
In a medium non-stick skillet over medium-high heat, cook the sausage, pepper, and onion for 5 minutes or until the sausage is no longer pink.
Spoon the mixture into a bowl and let cool slightly. Stir in the eggs and mushrooms.
Evenly divide the mixture among the prepared muffin cups. Sprinkle with the cheese.
Bake for 20 minutes or until the egg is set.
Note: make these ahead of time and warm them in the microwave for a fast and slimming breakfast treat.

I found this recipe for 126 calories per "muffin" but I substituted chicken sausage and recalculated for 96 calories per. Here was my breakdown;

Calories 96
Carbs 2
Fat 5
Protein 10
Fiber 1
Sodium 281

To convert cups to grams, I suggest using this website.
Go to it and on the top you will see a tab called "conversions", roll your mouse over it and you will see the spot for grams smile

OK, mine are done and if the smell is anything to go by... these are gonna be gooood!



I substituted a bit in mine, looked in 4 markets and couldn't find turkey or chicken sausages so ended up using reduced fat pork ones. I used the same weight values as suggested and stretched the mix to 9 cases rather than 6 :)

Nutrition breakdown on mine!

Calories: 103
Carbs: 3
Fat: 6
Sugar: 1
fibre: 1
Sat Fat: 2

EDIT: forgot to mention, used fresh mushrooms in mine rather than tinned :)

Perfect !!! I needed something high in protein with the eggs that I could take with me to work. I am at the gym before, so don't want to eat til I am done and in my office. Gonna give this a try....

A cup is a measurement of volume, a gram is a measurement of weight. You cannot convert them without additional information.
