i made them this morning, I used a whole egg though rather than just the white and used 10 grain pancake mix in place of the flour and soda and then added a splash of vanilla.

They weren't bad and VERRRY filling!!!

On a side note, I've never found that protein powder mixes well to bake with. I've tried to add it to oatmeal before and it was a mess. Same with waffles.

These look delicious! Huge fan of Greek yogurt, definitely going to make them tomorrow morning before my workout. Question: is three pancakes the serving size, or is one pancake a serving?

YIKES! I never realized how much sodium is in baking powder. That is 1/2 of my daily allotment in one meal.

Oops, meant in baking soda. Going to try with baking powder (about 1/3 the sodium of the soda).
