last night i made a great paleo dish with b/s chicken breasts!
4tbsp coconut oil 2 shallots cut into thick rings 4 4-6oz chicken breasts fresh ground pepper to taste sea salt (optional... i didn't use it) put coconut oil into a large skillet and once it's all liquified, throw in shallots and cook for one minute. season chicken breasts with pepper (and salt if you choose) and add to skillet. cook 7-8 minutes on each side until cooked entirely through. Enjoy!

It's more of a lunch recipe, but I like t slice it up into strips, toss with cajun seasoning and saute in a non-stick skillet. When cooked, I mix in some wing sauce. I put the pieces in a low carb wrap with shredded lettuce and thinly sliced onion. A tablespoon of light bleu cheese tops it off. Wrap it up and you have a great meal.

QUOTE: If I'm feeling really lazy, I just give them a solid dusting of garlic salt & black pepper and pop 'em in the oven. One of my favorites, if I have a little more time is this one- http://www.skinnytaste.com/2011/04/healthy-baked-chicken-nuggets.html Hope it helps. :) thank you! i'm totally using this! =) |

Check out this cool website
http://www.sixsistersstuff.com/2012/02/fresh-food-friday-50-easy-and-delicious.html My go-to chicken breast recipe is chicken piccata. Bake the breasts (usually I just brush them with a little olive oil and fresh garlic), put them aside covered. Then make the sauce, which consists of 1 tbsp olive oil, sauteed garlic, 1/4 cup dry white wine, capers, and lemon juice. Spoon over the chicken and voila! Healthy, easy, and so delicious!!! I serve it with roasted asparagus and throw a little of the sauce from the chicken on top. |

Cook the chicken.
Prepare about 1c (dry) white rice. Cut the cooked chicken into small pieces and throw it in a frying pan. Add taco seasoning. Add black beans 1/2 to 1c or so. Add the rice. Congrats, you just made Sidesteal's Ballin Ass Chicken Taco Dishâ„¢ Serve on tortillas or if you don't want to spend the calories on tortillas, just eat in a bowl. Don't forget hot sauce. |

Butterfly breasts for skillet or leave as is for baked
I use lemon zest, garlic, red/green bell peppers, onions, shallots, parsley all fresh. Saute that up and throw it over the chicken on a bed of quinoa yum yum You can also mince a habanero and mix with some cranberry sauce and use it as a spread on the chicken. |

I love my balsamic chicken recipe from the Jenny Craig website.
http://www.jennycraig.com/tools/recipes/details/59/result It's amazing. My husband is not a chicken fan and he likes it too. Becki

I love good balsamic on ANYTHING! It's fabulous if you take some sliced strawberries mashed with a bit of sugar, and marinate them in a little balsamic, and then put it over vanilla ice cream. Seriously! Try it! You'll be amazed!
