I like tomato soup and I like tomato paste. Which of course is because of the salt and extra ingredients that are added to it. However, I can't get a taste for a fresh tomato! I'm looking for a vegetable with similar nutritional value to eat as a substitute. I've read that squash (various kinds) and green peppers are often eaten in place of tomatoes. Any suggestions??

Eaten in the place of just slices of tomatoe or do you mean ON things?

I like half a roasted red pepper (roasted in my oven or on the stove, not the jarred kind) on my burger instead of a tomato. It's about the right consistancy (soft but not fall-apart-y).

Do you have specific things you want to switch for?

Why do you need tomato? I've never heard of trying to get all or certain fruits/veg in but I've heard of aiming for an array of colors daily. So I guess I'd pick a red bell pepper? Or tomato soup or tomato juice? Or salsa?

Why not try to make your own tomato soup at home? It would have less sodium and still be delicious. You could use onion and tomato and blend them into a soup..I knew a family who did that near my place and it was so delicious. I think they used a little garlic too.

Thanks you guys! Tomatoes aren't necessary I guess, I've just read that they are really good for you and I'm trying to find a way to slowly incorporate them into my meals !
