Dinner tonight – Mozzarella and Red Pepper Stuffed Chicken, green beans, onions, & grape tomatoes seasoned with Mrs. Dash Tomato Basil Garlic and simmered in FF chicken broth
Image not displayed

Chicken Inspired by this recipe:
http://www.lawrys.com/Recipes/Main-Dish/Mozzarella-and-Roasted-Pepper-Stuffed-Chicken.aspx?cmpid=2012-dinnertising-MozzarellaandRoastedPepperStuffedChicken-recipe
But with modifications: I marinated with FF Italian dressing and Mrs. Dash Garlic & Herb. I sautéed fresh mini red peppers in olive oil spray. I also used FF shredded mozzarella cheese.

Dessert – Cherry Cheesecake Pudding with Cool Whip
Mixed FF cream cheese with SF vanilla pudding, then topped with SF cherry pie filling and Cool Whip.

Dinner – My copycat version of Wendy’s Berry Almond Chicken Salad – I used 4 blend artisan lettuce, strawberries, blueberries, sliced toasted almonds, Weight Watchers 4 Cheese Italian Blend, pre-cooked chicken breast strips, a bit of Mrs. Dash Onion & Herb, and Walden Farms 0 calorie Raspberry Vinaigrette – It was sooo good!

Wendy’s ½ salad = 280 calories, 24 g carb, 12 g fat, 20 g protein, 580 mg sodium
My salad = 231 calories, 29 g carb, 9 g fat, 27 g protein, 551 mg sodium (If I would have made my own chicken, the sodium would be a lot less.)

The salad looks really good!!

Great stash!!! I see Walden Farms dressing in there, woohoo! Hope it's not the ranch, I don't like that one.

Chris/Tara - Injera is SO easy and healthy! Teff flour is a beautiful thing. Gawd, I can eat wayyyy too much of that stuff bigsmile

Great stash BTW! And that pizza looks so damn good. I don't ever crave pizza but damn, son! And I bought myself some goodies from the US of A yesterday after a day trip to NY ... Including SF/FF jello pudding! I see you scored some, as well.

Lastly, those savoury oats are making me hungry again. Damn. grumble

Breakfast this morning!

Chocolate egg bake: hungry jack pancake mix, egg whites and omega 3 eggs with Hershey extra special dark cocoa powder as well as some PB2 powder. So darn good and good for you! Walden Farm Caramel syrup to top it off with!

I'm glad other people ruin their food with sriracha too... hahaha. I put it on sushi a few nights ago and my friend acted like I had desecrated the holy temple of fish!

Actually lots of good looking food over the past week. Special nod to Chris and his stash for boosting the US economy.

Some of my eats from the past week or so. Peanut butter chocolate chipotle black bean and chicken chile which I mixed with spaghetti squash:

That chili was my dinner for a few nights as I made a big batch in the slow cooker.

Chocolate omelet:

Filled with peanut butter and banana but didn't take the money shot.

Oats with two eggs poached in, topped with bacon, avocado and Frank's RedHot Wing sauce:

So good, had it with some with ham instead of bacon today:

Proats w/ cocoa powder and bananas:

Sludge (nonfat cottage cheese + vanilla casein powder) topped with fresh blueberry compote:

Spaghetti squash with ground turkey sauce:

Dinner tonight was broiled salmon, Chinese broccoli, and quinoa:
