A bed of wild greens topped with cooked beets, goat cheese, candied walnuts and a bit of poppy seed dressing.
It's amazing how good this is.

Broccoli slaw, tossed with galeos ginger wasabi miso dressing, refrigerate for an Asian cole slaw. Can add spring onions, peanuts, chicken etc! But great alone as a side dish. The dressing is 45 calories for 2tbsp. Broccoli slaw is 25 calories for a huge serving!

I've been having this one a lot lately, and not really tired of it. I vary ingredients occasionally, but mostly it is the same.
2 cups Romaine lettuce or baby spinach 1/2 cup chopped bell peppers (whichever color I feel like buying, red/green/orange/yellow) 1/4 cup cucumber slices 1/4 cup chick peas 1/8 cup raw almonds 1/4 cup bean sprouts 2 Tbsp. light balsamic vinaigrette dressing (trying to get to the point where I can eat it without dressing, not there yet though. :)) Optional stuff that I mix and match or leave out, depending on what I'm feeling that day: 1 sun-dried tomato slice, chopped about 5-6 snow pea pods 1 hard-boiled egg

1 large romaine heart
1 celery stalk, chopped 1/4 green pepper, chopped 2 mini sweet peppers, chopped 2 whole mushrooms, sliced 3 baby carrots, sliced beets (I buy them in a jar, sliced and use a few slices) * If I have a ripe avocado I will add 1/4 of one as well, sliced I add one of these for protein: 1 hard boiled egg, grilled chicken slices or fish (tuna or salmon). I alternate dressings - I have not yet found one that didn't go well.
