Collard greens... cooked with pork! Always my fave, always. Southern style.

It would be easier to say what vegetable I don't like. I don't like eggplant, cooked carrots (I'm fine with raw) or tofu that isn't deep fried. All other veggies, I'm down with. Especially mushrooms.

I have a few:

* Mushrooms;
* Eggplant (especially grilled);
* Tomatos (because theyre a great base for sauces/curries/pastas ect); and
* KALE! Im obsessed at the moment.

Sweet potato for me too. I roasted up a big old sweet potato earlier in the week, ate half of it with dinner and snacked on the rest over the next few days.

Snow peas are my other favourite - lightly steamed or just raw, they make a great snack.

There's a million and one vegetables which I really don't like. I will try anything at least once though. My all time favourite has to be sweetcorn. I've recently discovered eddamme beans and I love mushrooms too smile

Brussel sprouts! I saute them in olive oil with salt and pepper and they are amazing! A close second would be asparagus!
