It would be easier to say what vegetable I don't like. I don't like eggplant, cooked carrots (I'm fine with raw) or tofu that isn't deep fried. All other veggies, I'm down with. Especially mushrooms.

I have a few:
* Mushrooms; * Eggplant (especially grilled); * Tomatos (because theyre a great base for sauces/curries/pastas ect); and * KALE! Im obsessed at the moment. |

Sweet potato for me too. I roasted up a big old sweet potato earlier in the week, ate half of it with dinner and snacked on the rest over the next few days.
Snow peas are my other favourite - lightly steamed or just raw, they make a great snack. |

There's a million and one vegetables which I really don't like. I will try anything at least once though. My all time favourite has to be sweetcorn. I've recently discovered eddamme beans and I love mushrooms too

Sweet potato for me too. I hope I never run out of new ways to cook them!
Asparagus, and artichokes are good also.

mixture of zucchini and summer squash, sauteed with garlic and sprinkled with asiago cheese and walnuts (from South Beach cook book). Yum!

I love (and always have) broccoli!!
A veg I used to hate but now love is sprouts, particularly with gravy and mint sauce, yum!

Asparagus! Love to steam it, or saute with olive oil and garlic! YUM!

Asparagus (Pictsweet Szechuan, roasted, steamed, just any way any time) and Sugar Snap Peas! I have about 20 recipes for sugar snaps and I keep trying new ones and love every stinking one of them!
