besides spinach which i've had a love affair with since i was 3, my second fave veggie at the moment is brussel sprouts. i love them mixed with a little EVOO, sea salt, black pepper and zested lemon then baked until tender

Cauliflower - who knew!!??????!! Ohhhhh soooooo gooooooood!!! I roasted a head of it for lunch today - delicious!!!
The sweet potato too - who knew!!??!! LOL!! I have only seen them at holiday gatherings with tons of sugar and crud on them, so I have steered clear. About a month ago I tried one baked = heavenly!!!! YES!!! With just a TINY dab of coconut oil, and/or almond butter = MMMMMMMMMMMMMMMmmmmmm!!!! |

I just discovered edamame is the best vegetable in the universe. So much protein!
Also, Alexa waffle cut sweet potato fries make me swoon. I look forward to them on weight training days.

Brussel sprouts! I saute them in olive oil with salt and pepper and they are amazing! A close second would be asparagus!

Red bell peppers and mini sweet peppers. Spinach in my smoothies. Avocado, asparagus, and broccoli,

Radishes right now - who knew they were delicious COOKED? Truly, they are. I tend to fixate on a different veg each month and then move on. Hopefully, home-grown zucchini will be here next month

Brussels sprouts sauteed in I Can't Believe It's Not Butter Light with a splash of balsamic vinegar and salt and pepper. 2nd is baked artichokes with olive oil and garlic. MMMMMM
