Any of you who have ever done Weight Watchers will know about this cake. My MIL made this last night and it was delicious!

Pineapple-Orange Sunshine Cake

Calories: 1515 for whole cake
127 per slice if cut into 12 pieces

Ingredients:

Cake: 1 box Sweet Rewards yellow cake mix
1/4 cup applesauce
4 eggs
11 oz. can (undrained) mandarin oranges in light syrup.


Icing: 8 oz. container light whipped topping
1 pckg sugar free instant vanilla pudding
20 oz can (undrained) crushed pineapple in juice


Directions:

For cake:

1. Preheat oven to 350 degrees
2. Stir together by hand all cake ingredients until well blended (about 2 minutes)
3. Coat 2 9-inch cake pans with non stick spray (can also be done in a 9 x 13 pan)
4. Bake 25 mintues or until a toothpick comes out clean

For icing:

1. Mix all ingredients until well blended.
2. Spread in between layers and all over cake
3. Keep refrigerated until serving

That sounds absolutely yummy, but where does one find that type of cake mix? I've never seen it. Do you have to buy it from Weight Watchers? I'll check the diet section at the grocery store. Thanks for this recipe!

It is either a General Mills or Betty Crocker product. I don't know if there is a Kroger where y'all live but that is where we get it.
