Thanks all for the great ideas. Made one soup last week and it inspired me to create my own this week. Now that I realize just how easy it is I may just experiment week to week with a different soup!!

Love mushrooms?

When i made this soup last....i divided it into 15 cups and it was 226 calories per cup!!

3 pints white button mushrooms
2 portobello mushrooms
1/2 pound crimini mushrooms
salt and pepper
broth from one chicken
1/2 stick butter
olive oil
1 large onion
3 cloves garlic
1 cup white wine
1 1/2 cups heavy cream
Balsamic Vinegar

1. Chop mushrooms into chunks.

2. Place about 2/3 of the mushrooms in a large soup pot with the chicken broth, salt and pepper and bring to a boil; turn heat down and simmer for about 1 hour.

3. Separate the mushroom from the chicken broth and let cool slightly.

4. When cooled, blend mushrooms and return to broth and let it heat back up.

5. Add 1/2 stick butter.

6. Saute the remaining 1/3 mushrooms, in olive oil, with the onion, garlic, salt and pepper.

7. Add the sauteed mushrooms to the broth with the blended mushrooms.

8. De-glaze the pan with white wine and add to mushrooms.

9. Slowly, stir in cream until well blended.

10. Serve in bowl with a small amount of Balsamic Vinegar stirred in.

one of my favorites
*split pea*
1 lb split peas sorted and rinsed
2 cloves garlic minced
1 onion chopped
3 or 4 carrots chopped
3 or 4 celery stalks chopped
1/2 head cabbage chunked up
8 or 9 cups water or broth ( can add mor as needed)
1 bay leaf
put it all in a deep pot and simmer about 90 minutes
super low fat ham or 1 smoked low fat turkey sausage ring chopped and added about 30 minutes before done

I love this soup with a sprinkle of mrs dash mixed in my bowl

I believe there are really no hard and fast rules for making soup- just throw your favorite vegs and some broth ( or water ) in the pot and cook till vegs are soft and you can blend any soup for a creamy change- have fun ! :)
