Chocolate-Coconut Fat Bombs
Fat bombs are really kind of cool. Its a nice way to treat yourself while keeping carbs and sugar low and getting a nice burst of energy from grass fed butter and coconut oil.
I used a double boiler, but you could just put a metal bowl over a small pan of boiling water to melt everything down, you just want to get everything liquidy enough to incorporate together smoothly. I had to prewarm my coconut oil and butter though to get it out of the jar.
8 Tblsp Kerrygold unsalted butter
4 squares Lindt 85% dark chocolate
4 Tblsp coconut oil-Unrefined
4 Tblsp Coconut Butter-I use Artisana
1 Tblsp Heavy Whipping Cream
A few drops of liquid splenda-or sweetener of choice to taste. You dont need too much.
Melt it all down in your double boiler.
You can use candy molds, but I had an extra ice cube tray handy. I sprayed it with some cooking spray and I put a little over 1 Tblsp of the candy mix into each cube compartment.
Keep these in your freezer! They will melt at room temperature. Thats why the ice cube tray idea works really well.
A serving is two "cubes"
