Crockpot Goodness -- everyone's been asking!

My apologies for taking so long to post this, but I've been kind of busy with stuff. Sooooooooooooooooo.... here is the recipe for the pot roast that I made and was DE-li-cious!!

Roast -- I went for a 3lb piece but purchase depending on your personal opinion

Baby carrots (I used two handfuls)

Celery - 2 stems

Onion - 1 sweet

Red bliss potatoes - 1-2 depending on size

Sweet potatoes - I used 1 1/2

Water - 1 cup

Cabernet Savignon - 1 cup

Salt, pepper and garlic powder (to taste)

Crockpot liner

 

I have a smaller slow cooker so I split the roast into two even pieces and had two meals out of the deal. Season the meat with garlic powder, salt and pepper.  Line the interior pot with the liner. Cut up celery, potatoes, sweet potatoes, onion and line bottom of pot with them (not all) plus carrots. Lay roast on top of veggies and then proceed to top the roast with remaining items. Put water and then cabernet overtop of the meat and veggies.  I like to do this the night before so the meat soaks up the juices.  Put on next morning - low setting for 7 hours.  Then ENJOY!!

So yummy! Except for the wine (I don't drink alcohol) I make it exactly the same. I like to add V8 juice as my liquid, because anything with a tomato base acts as a tenderizer as well.

I have a similar recipe but I add a bay leaf and majoram and use beef broth as the liquid. I have never added wine but I may try that for some added flavor. I never liked pot roast as a child because I always though the gravy tasted like dirty water! By using the broth and herbs the gravy is much more flavorful.
