Spaghetti Squash
I've definitely heard of other people replacing their pasta with spaghetti squash before. I always thought "there's no way I'm giving up my pasta!" and I didn't give it much of a chance. The idea of eating my meatballs with squash seemed less than appealing to me.
But last week I decided to give it a try.

Like, I PREFER to eat my meatballs and red sauce over spaghetti squash now, it is that good!
It is so easy to make. Slice it in half, scoop out the seeds, put it in a glass dish, put about a half inch of water in the dish, and then bake shell side up at 400 degrees for 30-45 minutes. Then you take a fork and break it up into little spaghetti strands! I put it all in a container and then stick it in the fridge- then I just heat it up when I want to eat it! I also eat some of it as soon as it comes out of the oven because I EVEN LIKE IT PLAIN!
The flavor is really pleasing and the texture is perfect for holding sauce. (way better than noodles- this soaks up all of the sauce!)
I am a huge fan now and I'm kicking myself for not giving this a try sooner.
Best part? I can eat 2 cups of the stuff for only 80 calories. That is a lot of food and it is very filling! It is high in potassium and other good-for-you things that I can't remember at the moment.

I don't know about you, but a quarter cup of pasta just makes me crabby! I love that I can have a HUGE portion of spaghetti squash and feel quite decadent!

@tonikins- I reheated mine in the microwave but the stove would work too. My SIL said she loves her squash sauteed in a pan on the stove.
Use cooked spaghetti squash to line a pie pan (as if making a shell). Then, add about 1/2 cup of ricotta cheese on the bottom of the crust. To that, add a mixture of cooked ground turkey and a can of diced tomatoes. Top with shreddded mozzarella cheese and bake until heated through.
