Spaghetti Squash

I've definitely heard of other people replacing their pasta with spaghetti squash before.  I always thought "there's no way I'm giving up my pasta!" and I didn't give it much of a chance.  The idea of eating my meatballs with squash seemed less than appealing to me.  

But last week I decided to give it a try.

DELICIOUS.

SERIOUSLY.  

Like, I PREFER to eat my meatballs and red sauce over spaghetti squash now, it is that good!  

It is so easy to make. Slice it in half, scoop out the seeds, put it in a glass dish, put about a half inch of water in the dish, and then bake shell side up at 400 degrees for 30-45 minutes. Then you take a fork and break it up into little spaghetti strands! I put it all in a container and then stick it in the fridge- then I just heat it up when I want to eat it!  I also eat some of it as soon as it comes out of the oven because I EVEN LIKE IT PLAIN!  

The flavor is really pleasing and the texture is perfect for holding sauce.  (way better than noodles- this soaks up all of the sauce!)  

I am a huge fan now and I'm kicking myself for not giving this a try sooner.

Best part? I can eat 2 cups of the stuff for only 80 calories.  That is a lot of food and it is very filling!  It is high in potassium and other good-for-you things that I can't remember at the moment.  

Yay spaghetti squash! :)

I tried making spaghetti squash a while ago and it didn't turn out like spaghetti, so I just tossed it. I'll give it a try again. We loooove pasta in my house- evey Monday is pasta day. I'm curious to see if my picky boys would like it. Always trying to sneak in veggies into their diets. Thanks for sharing! :)

My wife & I recently discovered sauteed cabbage as another substitute for spaghetti. Cut the cabbage in 1/4" strips and saute w/a little olive oil till translucent, then add sauce. Mmmm, good stuff! Enjoy!

YAY for Spaghetti Squash!! I agree, it really is better than using pasta!
I don't know about you, but a quarter cup of pasta just makes me crabby! I love that I can have a HUGE portion of spaghetti squash and feel quite decadent!
Thanks for reminding me of this great veggie. Will definitely pick some up at the grocery store on the next trip!!

I love pasta but hate the calories. So I'm going to give this a try. How would you reheat it? In the microwave or in a pan on the stove?

@keith- cabbage sounds great too!
@tonikins- I reheated mine in the microwave but the stove would work too. My SIL said she loves her squash sauteed in a pan on the stove.

Quicker way to cook it, and have it "al dante", is poke some holes in it. Throw it in the microwave for 11 minutes (1100w), and then take it out (wear oven mitts!) Let it sit for a couple of minutes, then split in half, pull the seeds out with a spoon and scrap it out with a fork.Fast, easy, delicious!

I have a great recipe for Spaghetti Squash Pie!

Use cooked spaghetti squash to line a pie pan (as if making a shell). Then, add about 1/2 cup of ricotta cheese on the bottom of the crust. To that, add a mixture of cooked ground turkey and a can of diced tomatoes. Top with shreddded mozzarella cheese and bake until heated through.
